Bred by our friend Frank Morton, Red Ursa is a broad-beamed, frilly Oak-Leaf kale known for its exceptional flavor and tenderness. This bicolor variety starts as a green baby leaf with a soft purple stem, which deepens in color to a rich purple when touched by frost. As it matures, the leaves turn a beautiful mahogany-garnet with pale taupe stems. Baby leaves are perfect for fresh salads, while the mature leaves shine in slow-cooked dishes like soups and stews. Extremely cold-hardy, Red Ursa is an excellent choice for both early spring and fall harvests, making it one of our top picks for the season.
