Aji Peruvian is another amazing Baccatum variety from Peru. It is one of the best producers in the Baccatum family. The pods are 3″ long and 1/2″ wide. They start off creamy white, then change to orange and end up red, when they are ready to be picked. The pods have a very sweet flavor and is great for fresh eating if you can handle the heat though or use them in a salad, a salsa or dry them and make your own chili powder.
